Rice cookers are the business, mine gets a workout a couple of times a week and has done for years. Over time I have noticed they get a little more fancy in their ability. The bonus of these new rice cooker features nowadays is you can seamlessly cook white rice, brown rice, porridge and even soup, so they now broaden the dish possibilities (take note kitchen lazy bums, no more excuses). I love rice, could eat it every single day, so it’s no surprise my rice cooker works hard.
SunRice recently sent me a box of SunRice Rice & Lentils to sample (why thank you!), and a premium rice cooker to make them with. I usually just plug appliances in, turn them on and off we go. With this one however I read the little booklet first, and was excited to see this ‘intelligent rice cooker’ comes equipped with 12 functions including cake cooking. GET OUTTA TOWN. Cake cooking! If this rice cooker had a heart, I’d put a ring on it.
This simple roasted pumpkin, brown rice and lentil salad was whipped up using the SunRice goodies I received, along with some of my other favourite vegetables, herbs and some feta. I love the texture of brown rice, and with the addition of lentils you get this lovely little grain explosion in your mouth. You could roast some cauliflower instead of pumpkin if you prefer, or drizzle over your favourite dressing, or do whatever you like with it really. Salads aren’t meant to live by the rules.

Ingredients // serves 3-4
2 cups SunRice brown rice & lentils
4 cups chicken or vegetable stock
500g pumpkin, peeled and cut into 2cm pieces
1 tablespoon olive oil
Splash of balsamic vinegar
3-4 spring onions, sliced
Handful of cherry tomatoes, halved
100g feta, diced
A good handful of coriander
Cook rice and lentils in stock according to rice cooker instructions.
Place diced pumpkin into a bowl, add a generous splash of olive oil and balsamic vinegar, season with sea salt and mix to coat pumpkin well. Spread pumpkin out on a baking tray and roast at 200C for 25-30 minutes until golden brown and tender.
Once rice and lentils are cooked, combine all ingredients in a bowl and top with your favourite herbs (coriander for me). Serve.
